Peanut Butter + Reishi Cookies
Plant Powered Cookies
These simple three-ingredient cookies are easy to make, pack a protein-filled punch, and are infused with the medicinal power of two very mighty mushrooms. This recipe features reishi, a classic herbal adaptogen well-known for its traditional used for its immune supporting properties, and lion’s mane, which has historically been used to help nourish and support the nervous system. You can barely taste the mushrooms once blended into these sweet and dense cookies, making this a perfect recipe for even picky eaters.
1 cup creamy peanut butter
½ cup organic cane sugar
½ cup brown sugar
½-1 tsp vanilla extract
2 teaspoons reishi mushroom powder
1 teaspoon lion’s mane mushroom powders
Heat oven to 350 degrees. Add one egg to a medium sized mixing bowl and beat lightly. Add peanut butter, both types of sugar, vanilla extract, and both mushroom powders. Mix ingredients together (a wooden spoon is fine) until well combined and smooth. Drop by rounded spoonfuls onto a cookie sheet lined with a silpat or piece of parchment paper. Bake for 10-12 minutes, or until cookies tops are set and bottoms are lightly browned along the edges. Overbaking these cookies will result in a bitter taste, so make sure to keep your eyes on them!
